Haven't been around much the past couple of days. Traveled a lot of miles but here's the result of part of the travels. Take a couple of pieces of steelhead, brown or salmon and remove the skin and bones. Sprinkle generously with Old Bay Seafood seasoning and then spray with olive oil. Cover and put in the fridge for a couple of hours. Remove from fridge, coat with pancake flour and fry in a 1/2" of hot oil, 375 degrees. Makes a very tasty meal especially with a glass of wine or a good mixed drink.

Pan Fry a few perch fillets as you normally would with egg and cracker crumbs. In another pan brown a few mushrooms in butter and pour into a pan of the best tomato soup( no el cheap-o's here) pour in a scoop of mixed veggies and a couple of shakes of your favorite hot sauce. once all heated spoon over your fish and sprinkle with a little Parmesan cheese. It's yummy :P :P :P

Not a problem pal. Them suckers really taste good that's for sure. Now you know why I like to bring them home. The Browns are the best eating of the two. Just remember to soak them in a little salt water first and squeeze the moisture out of them between two pieces of paper towel. Draws the strong taste out.

Here's an easy one. Take a couple of pieces of Coho, steelhead, other trout or other salmon with the skin removed. These are Coho in this picture. Spray the bottom of a small baking dish or pan with extra virgin olive oil. Sprinkle the bottom of the pan with you favorite spices like chili powder, Italian spice, salt, pepper or what ever else trips your trigger. Lay your fillets on top. Squeeze lemon juice on the top of the fillets and repeat the spices. Then spray again with extra virgin olive oil and bake in a preheated 400 degree oven for about 15 minutes. Serve with your favorite veggies, rice, noodles or what have you. It's good and good for you.

Lunch today was awesome and here's what I had.

Take a small pan and line it with foil. Tear off another piece of foil to go inside the pan and large enough to seal this meal and butter it.

Slice up a good strong yellow onion and put the rings over the fish fillets lying on the buttered surface. Sprinkle with salt and pepper.

Cut up some red potatoes and place them in the pan being the next layer and throw in a couple of pats of butter. Use a few more onions, sprinkle with Cayenne pepper for a good bite and top with Sweet Baby Rays BBQ sauce. Splash on a couple of dashes of Worchestershire sauce, close tightly and bake in a preheated 350 degree oven for 40 minutes.

Remove from the oven and open carefully. Plate this up and enjoy with a good glass of wine or beverage of your choice and is it ever good. Has a real nice bite to it.

After you enjoy this meal and it's all cleaned up and gone, save the sauce that's in the pan as it goes really good over rice or mashed potatoes in your next meal.

Old Bay is some good stuff and I use it for my fish boils too. Speaking of which I'm going to do that next week. Good old fish boil with red taters, onions, northern pike slabs cut into chunks and might even throw a few shrimp in there with it and serve with some sour dough bread toasted.

Lunch today will consist of a couple of slabs of Salmon. With the skin removed and deboned, place 1 quart of water in a pan and bring to a boil. Add 2 tablespoon of Old bay seasoning. Gently float the pieces of salmon into the boiling stock for about 4 minutes or until cooked thru.

Remove to a plate with paper towel to drain. Add a little lemon juice to each piece of fish and sprinkle on a little dill weed. Serve with toast, your favorite veggy and a drink. Great lunch it is. Hope you give this a try. It's awesome. ;D ;D ;D
